I've got a co-worker who told me about it and has been raving about it for about 2 weeks now. So I started reading up on it and it's got some pretty impressive reviews by steak snobs.
Basically you put a ribeye in the oven on 275 for about 45 mins (depending on thickness of meat--you are supposed to track the internal temp of the meat to 115-125). Pull it out and let it rest for 15 minutes. Then sear both sides in a skillet and serve.
I'm going to try it tonight. Anybody ever done it? Experiences?
