OT: Scandinavian & Scotland Recs

Taking a backpacking trip to Europe in September and this is my second time backpacking so I know what to expect as far as transport and accommodations go. Was mainly looking for good places to drink and eat, as well as diamonds in the rough in the following places:

Stavanger and Bergen, Norway
Stockholm, Sweden
Copenhagen, Denmark
Edinburgh and Glasgow, Scotland
