Heading to Denver for the holiday

Just left DFW headed to Denver. Taking 287 up to Amarillo, staying the night, and then off we go. From Amarillo we are taking the route through Raton, NM and then up through Colorado Springs.
Any recommendations on things to do / see on our way up via this route?

Thinking about eating at Big Texan Steak Ranch (Home of the free 72oz steak) tonight in Amarillo. Any good?
