St. Thomas & Virgin Islands Recs

Going to the US Virgin Islands this winter, and I wanted to flush out my to-do list.

- I'll be there for 8 days.
- I'll be staying at Sapphire Beach (east end) in St. Thomas.
- Planning on going to St. John for at least 1 day and Virgin Gorda for 1 day.

Questions:

1. Do you have any restaurant & bar recommendations, particularly on St. Thomas & St. John?
2. I've got a car rented for St. Thomas, should I do the same for my day trip to St. John?
3. is Jost Van Dyke worth it?
4. What are the can't-miss excursions?
