Recently received a speeding ticket...Question?

I was pulled over a couple weeks ago in Keller, and received a ticket for going 18 over. The officer asked why I was speeding, and I apologized and told him I didn't realize I was cruising that fast. He asked how my driving record was, and I told him it should be good. I mean I've had a few speeding tickets and a wreck in the past, but I did "differed adjudication" and they were removed from my record (so I thought).
So he took my ID, and headed back to his car. When he came back he told me that he is a former corporal and he doesn't usually give tickets for speeding (B.S.), but he was going to give me one this time. His reasoning was because when he ran my driving history he saw I had a few speeding tickets in my past. He said he wanted me to sit in front of a judge to correct my behavior. Seriously?
I'm confused and frustrated. For one those tickets were years ago. Secondly I thought when tickets drop off your record by doing "Driver's ED" or "differed adjudication" they aren't seen in the future. Is this not the case?
