Any tips from any of you? Gonna brine on Friday and start up the turkey around 12 on Saturday. Have never attempted one before. The directions vary across what I have read but seem to be the same in relativity.

Do you guys take out the backbone before smoking or not? That seems to be what I have run across a few times in my research.
