Need help on Mexico

Looking to head somewhere in Mexico in May...where should I go?

Want all-inclusive and mostly want food reviews as I wont be traveling outside of the resort. I am not really that picky on anything else. Would really want somewhere that has a casino. Looking to stay under 1200 a person for like a 5 day/4 night type trip.
