Italy Vacation Packages: Advice Needed

Would like to do 7-10 days in early September. There seem to be a million packages out there and we can’t determine what the best ones are (all seem to have great reviews). Would like to do Rome/Florence/Venice or Tuscany. Looking at spending 9-11k for 2 people.

Is it better to book a package or should we just plan it out on our own? (I have a ton of Delta Miles).

If booking a package is the way to go....anyone have a recommendation?
